The aroma has a prominent coriander flavor coming off as slightly earthy and floral. This beer is imminently drinkable, with a subtle citrusy flavor from the fresh orange zest that plays remarkable well with the fruitiness from the yeast. No mixed culture was pitched, but it definitely has some brettanomyces funk and a small amount of acid. It’s can-conditioned with local orange blossom honey and aged for an addition 6 weeks. Our “Witbier” is fermented in oak barrels with the Bootleg Biology Saison Parfait Strain (same as we use for Saison du Rosier) and aged for 3-4 months.
